I take inspiration in the abundance of the freshest vegetables from the famous farm of Mr. Masataka Higuchi, which is located directly across the street from muroi. My techniques have developed over the years by working in some of the top restaurants in Japan, North & South America, and Europe. Special consideration is made for the water used to cook the rice, and to make the Dashi (Japanese soup stock). For this I go to draw natural water at the Kiyomi Pass every day. Please try muroi's unique approach to producing exquisite meals, produced by carefully selected ingredients.
